My friend is a short order cook at a local grease pit, and he told me in the morning he makes "splash browns" - he calls them that because he also rinses all the nasty dishes in the sink next to the food prep area, and the potatoes get splashed with nasty water before he fries the hash browns. He said he would never eat where he works, and most cooks at fast food places could care a less what gets on your food. Sometimes he said he will make sandwiches with mayo that had crust over it in the huge pails it comes in....eater beware!
