"I think that it means to have an open mind and to trust that you are not the center of the universe just a little bit more, each and every day."

I agree somewhat with Kathy on this point.

: What does it mean - to grow spiritualy?

Cynically speaking, it is a term used by priests and other religious zealots to imply that your current lifestyle does not conform with their standards.

To fully understand God, it appears we need spiritual knowledge, and this can only be acquired through a deepening faith in God.

Those who cannot seem to find enough faith in the ethereal need more 'spiritual growth' to fully understand the intricacies of a certain belief.
It is also used when questions are asked which cannot be answered. The reply being 'You don't understand as you need more spiritual growth'.

Another viewpoint is that the human spirit or soul needs constant nourishing to grow, much like any other facet of human existence. We can be fed spiritually by music or beautiful scenery which seem to instill upon us a feeling of peace and wellbeing.

Either way, it delves into an area which is impossible to quantify in any meaningful way.
A form of superiority complex if you will.
